KUIH LOPEZ PERANTAU




Bahan-bahan ( 4-6 orang )

* 3 cawan beras pulut
* 3 cawan santan
* pewarna hijau
* kelapa parut/kelapa kering 1 cawan (secukupnya)
* garam
* 1 biji gula Melaka/ 5 sudu besar gula perang (brown sugar)
* 11/2 cawan air
* *** daun pandan jika ada boleh gantikan pewarna hijau dan masukkan ke dlm air gula

Cara-cara

1. Rendam beras pulut dengan sedikit pewarna hijau selama lebih kurang 1/2 jam atau pulut bertukar warna

Masukkan santan dan secubit garam

Kemudian masukkan dlm microwave sekurang2nya 15mins (ikut jenis microwave) dan kacau setiap 5 mins untuk pastikan beras dan pulut sebati dan masak

sediankan cling film/plastik dan oleskan sedikti margerin dan letakkan 1/3 bahagian pulut ke atsanya

Gulung pulut tadi dengan padat dan rapi

6sejukkan
Sejukkan pulut sbelum dipotong

Gaulkan_kelapa
Setelah sejuk potong lopes ikut ketebalan yang disukai dan gaul dengan kelapa parut yang diletakkan sedikit garam
9. Untuk air gulanya >>> masak gula bersama air dan tapiskan sebelum dituang ke atas lopes

SQUID WITH VEGETABLES






Ingredients:
500g of squid (cut into half)
Brocolli
Red pepper (cut into 3cm length)
French bean (cut into 5cm length)
1 onion (finely chopped)
4 garlics (chopped)
Oyster sauce
1 cup of water
1 spoon of corn starch
2 spoons of oil


Steps:
Add squid, french bean and brocolli in a boiling water for 5minutes.
In a wok, heat over the oil then add in chopped garlic,onion and red pepper, stir till it turn yellowish.
Add in squid, french bean, brocolli, water, oyster sauce and corn starch.

Still well then close the wok and let it for 10min.

SWEET AND SOUR CHICKEN


INGREDIENTS
8 skinless, boneless chicken breast halves - cut into chunks
1 can pineapple chunks, drained
1/4 cup cornstarch
1 3/4 cups water
3/4 cup white sugar
1 onion-cut into 4
I can of tomato sauce
1/2 green pepper-cut into 3cm long
Oil
2 cups of breadcrumbs
1 egg(beaten)
Salt


DIRECTIONS
Combine beaten egg in a large bowl and mix with the chicken. Take off the chicken and coat with breadcrumbs.

Heat oil in skillet or wok to 360 degrees F (180 degrees C). Fry chicken pieces in hot oil until golden. Remove chicken, and drain on paper towels.

Heat over 2 spoons of oil then add onion, leave till it turn yellowish then add in green pepper and tomato sauce. Mix well.
Combine water,sugar ,salt and gradually add in cornstarch, slowly stir. Continue stirring until mixture thickens. Finally, add in pineapples, stir about a minute.

Add chicken pieces, and stir until chicken is well coated.

CHOCOLATE CAKE

Easy chocolate cake, for lazy people like me hih hi hhih.









Ingredients:
250g butter
200g dark chocolate, broken into pieces
110g caster sugar
100g brown sugar
250mls warm water
340g plain flour
1tsp baking powder
2 eggs, lightly whisked
Method:
Preheat oven to 180°C. Grease your cake pan with melted butter.
Combine unsalted butter, chocolate, sugars and water in a heat resistant bowl or in the top of a double saucepan and stir over a saucepan of simmering water until melted and well combined. Remove from heat and stand until lukewarm.
Sift together the flour and baking powder, gently mix into the chocolate mixture with a whisk until thoroughly combined. Whisk in the eggs.
Pour mixture into the cake pan and bake for about 1hour or til a skewer inserted into the centre of the cake comes out clean.

SQUID THAI STYLE

Ingredients:
1 kg squid (cleaned)
1 stalk fresh coriandre (chopped)
1 onion (finely chopped)
1 spoon of tumeric powder
Salt

Directions
1. cut squid into small squares.
2. blanch squid for 1 minute in boiling water.
3. Take off water and mix squid with tumeric powder and salt evenly.
4. Heat oil and add in chopped onion.
5. Add in squid and coriandre for about 5min or till its cooked.

MILO CHOCOLATE CAKE

Out of cacao powder so had to use the milo powder instead lol.



INGREDIENTS:
170g all-purpose flour
2 tablespoons milo
2 pinches salt
200g sugar
1 tablespoon vanilla essence
1/2 cup fresh milk
1/2 cup vegetable oil
2 eggs
1 tablet of chocolate (plain) broken to pieces

METHOD:
Preheat oven to 350 deg/180 deg C
Grease a 9 inch(23cm) cake tin.
Mix flour, cocoa powder, baking powder, salt, sugar and vanilla essence in a bowl.
Add milk, vegetable oil and eggs.
Mix everything together until smooth, either by hand or by using an electric mixer at slow speed.
Add in the pieces of chocolate on top, press it till it enters at the end of your mixture.
Transfer to bake tin and bake until a wooden pick inserted in center comes out clean, approximately 35-45 minutes.

1kg chicken breast, cubed chicken thigs or wings can also be used
4 green pepper, cut into 1 inch sizes
Skewers

Preparation
Thread the chicken alternately with the green pepper onto the skewers.

Grill chicken in a preheater griller, turning every now and then till well cooked.

LAKSA PERANTAU

Delicious, fast and easy laksa .....





BAHAN-BAHAN

Laksa kering yg direbus

Dua tin sardin (yg dibasuh utk dibuang minyaknya)
Seikat daun kesum
Seikat daun mint (kalau takde daun kesum, kalau ada dua dua pun boleh)
Sekuntum bunga kantan
Sebatang serai (kalau takde bunga kantan, kalau ada dua dua pun boleh)
5 ulas bawang merah
Sedikit belacan.
Cili kering (yg direndam dalam air panas, quantiti terpulang pada diri sendiri, kut rasanya nak ulang alik gi bank kecik banyak kali, sila silalah letak bebanyak)
3 asam keping
Air dan garam secukup rasa

Cara-cara membuat kuah
Blend air, belacan, sardin, daun kesum, daun mint, bawang merah dan cili kering. Kalau tak muat, buat dua round.
Masukkan bahan² blend tadi ke dalam periuk besar.
Masukkan asam keping, bunga kantan dan serai.
Biarkan sehingga mendidih, kacau sekali sekala.
Bila dah mendidih baru letak garam.
Hidangkan panas² dgn laksa yg telah direbus bersama dgn hirisan timun, bawang, salad dan telur rebus.

Selama ni ingat susah bebeno ler buat laksa, rupanya ada version express punya hik hik hik. Tak payah susah susah nak rebus ikan, asingkan isi dan tulang. Time is gold ahaksss.

GRILLED CHICKEN SKEWERS

Actually I wanted to do the Yakitori (japanese grilled chicken) but looking at the ingredients in which contains alcohol, I had to change it.

So, it's not really Yakitori hih hih hih. Ingredients
1kg chicken breast, cubed chicken thigs or wings can also be used
Skewers

Sauce:
1 spoon white vinegar (cuka)
6 spoon soya sauce
1 spoon oyster sauce
1 spoon sugar
150ml water
1 chicken cube
1 spoon corn flour

Preparation
Bring the sauce to boil for 5 min or till its thicken then set aside.

Thread the chicken onto the skewers

Grill chicken in a preheater griller, turning every now and then till well cooked.

Pour the sauce along the chicken and cook for a minute.

EASY BUTTER CAKE




Ingredients
250g butter
200g sugar
210g flour
1 tsp baking powder
5 eggs

Mix well butter, sugar and eggs about 10min in a mixer.

Add in flour and baking powder and mix well.

Bake in an oven around 160C around 50min.

ROAST LAMB





INGREDIENTS
Big portion of lamb.
Any kind of spices.
Salt.

Steps:
Steam lamb till it's half cooked.
In a plate to put in the oven, spread the spices and salt all over the half cooked lamb.
Cook in the oven till it turned brown.
CHOICES FOR SIDE DISH
French bean
1. Steam french beans till it's half cooked.
2. Cut garlic and onion to small pieces.
3. In a wok with a bit of oil, heat garlic and onion till it turn yellowish
4. Add in a spoon of oyster sauce.
5. Lastly, add in the steamed french beans, mix it all for about a minute.
Buah berangan
1. Goreng tanpa minyak buah berangan yg dah direbus terlebih dahulu.
2. Habis cerita hih hih hih.

Kentang
1. Steam kentang yg dah dibuang kulit
2. Bila dah masak, hiris setebal 1cm dan masukkan dlm bekas.
3. Panaskan 2 sudu besar mentega, garam secukup rasa dan campurkan daun coriandre yg dihiris halus².
4. Campurkan mentega ke atas kentang tadi dan kacau.

BEEF AND CHEESE SPRING ROLLS



Ingredients
Spring roll wrappers
cheese (any kind of cheese)
Beef
garlic
oyster sauce
2 spoon of oil

Preparation
Chop finely the beef and cheese.

Wash and dice the garlic chives.

Heat the wok over medium-high to high heat.

When the oil is hot, add the garlic and stir-fry until aromatic.

Add the beef and oyster sauce.

Stir-fry until it's cooked through and finally add in the cheese, mix well. Set aside.

Clean out the wok. Pre-heat the oil for deep-frying to 360 degrees Fahrenheit while preparing the spring rolls.

Lay a spring roll wrapper in front of you so that it forms a diamond shape. Use your index finger to wet all the edges with water or a cornstarch/water paste.

Place approximately 2 tablespoons of filling near the bottom. Roll over once, tuck in the sides, and then continue rolling.

Seal the top.Deep-fry the spring rolls in 3 to 4 batches, cooking until they are golden brown and crispy (about 3 minutes).

Remove with a slotted spoon and drain on paper towels.

AYAM GOLEK SANDWICH(CHICKEN SANDWICH)

Here's what you can do if you have your AYAM GOLEK MADU left from yesterday's dinner.

A fast and delicious chicken sandwich .
Ingredients:
Left over AYAM GOLEK MADU
Bread
Cheese
Butter
Mayonaise

Toast your bread in a toaster then apply some butter.
Add in the cheese and mayonaise.
Finally add in your AYAM GOLEK MADU.

NASI MINYAK BERTAKHTA NENAS(PINEAPPLE RICE)



Ingredients:

3 cups of rice
1 tsp of tumeric powder(serbuk kunyit)
1 pandan leaf(daun pandan)
1 cinnamon stick (kayu manis)
3 star anise (Bunga lawang)
5 cardamoms(Buah pelaga)
250ml ghee (minyak sapi)
200ml milk(Susu cair)
400gm pineapple: cut into little cubes(Nenas)

Sliced:
1/2 onion
3 garlic
2cm ginger

Steps:
Wash the rice and put aside.

In a rice cooker, Hat ghee and add in the sliced ingredients together with the cinnamon, star anise, cardamoms and fry until golden brown.

Add in the pandan leaf, tumeric powder. Mix well .

Add in the rice, pineapple, milk and salt.

Finally add in water according to your need.

Tips:
How to know the right amount of water when cooking a rice in a rice cooker?

I used my mom's old method.

Measure the rice with your finger.
Then put your finger on top of the rice.

The water level( milk + water) must be the same as the level of the rice.

HONEY CORNFLAKES


Ingredients
¼ cup butter ( 50gm )

¼ cup honey

1 tbs sugar

4 cups cornflakes


Steps:
1. In a frying pan, melt sugar and butter.

2. Add in honey, mix it quickly.

3. Add in cornflakes and mix it well.

4. Pour in paper cups

5. Bake in oven around 180° for 5minutes.

AYAM GOLEK MADU (ROAST HONEY CHICKEN)

What I love about this "ayam golek madu" is the "juice" from the marination. The taste of the lemon grass with other ingredients is just finger licking good.





Ingredients:
One whole chicken



Marinate:
5 lemon grass
1 big onion
3cm ginger
3 sp of honey
3sp sugar
1 sp of tumeric powder
125ml coconut milk
1 tsp of salt
2 sp of oil

STEPS:
Steam the chicken till it's half cooked.
Blend all the ingredients for the marination.
Pour it over the chicken and marinate for one hour.

Cook in an oven till the color turns darker.
Serve with nasi minyak or nasi pilaf

NASI MINYAK LEMAK (RICE WITH COCONUT MILK)



Ingredients:

3 cups of rice
1 small spoon of tumeric powder
2 lemon grass
1 cinnamon
150gm butter
350ml coconut milk


Chopped:
1/2 onion
3 garlic
2cm ginger

Steps:
Wash the rice and put aside.

In a rice cooker, heat the butter and add in the chopped ingredients together with the cinnamon till it turns yellow.

Add in tumeric and lemon grass. Mix well till the smell comes out.

Add in the rice, coconut milk and salt.

Finally add in water.

Tips:
How to know the right amount of water when cooking a rice in a rice cooker?

I used my mom's old method.
Measure the rice with your finger.
Then put your finger on top of the rice.

The water level(coconut milk + water) must be the same as the level of the rice.

ACAR TIMUN (CUCUMBER)


Ingredients:
Red pepper
Cucumber
Onion (chopped into 4 parts)
White vinegar(8 sp)
Sugar (4 sp)
Salt (1 tsp)



In a bowl, mix well vinegar, sugar and salt.

Add in onion and red pepper.

Leave for 5minutes and finally add in cucumber.

FAST AND FURIOUS ORANGE CAKE



Ingredients:
250gm butter (room temperature)
2 spoon orange zest
250gm sugar
4 eggs
300gm flour
1 spoon baking powder
1/2 tea spoon salt
180ml orange juice
1 tea spoon vanilla essence

Steps:
Add sugar, butter and orange zest and beat till the mixture becoming fluffy.
Add 4 eggs and vanilla essence.
Continue adding the orange juice and flour, baking powder and salt.
Beat till another 5 minutes or till it's well mixed.

Bake in a pre-heated oven at 160° till it's well baked.

How to know if it's done? Well, insert a bamboo stick in the middle.
